The hardest thing about making muffins is finding the liners for the tins. They actually don’t sell them at the supermarket I am closest to. Thats how it is shopping for ingredients on Maui.
I made these muffins on a whim, I had a bag of mixed frozen berries I needed to use.
The recipe was from Barefoot Contessa at Home, called tri-berry muffins. Here is a link to her blueberry coffee cake recipe
Betty, 5, was my kitchen assistant. She mixed the dry ingredients, whisked the eggs and wet together too. She also buttered the pans since we were short with paper liners.
The muffins are always a success. My frozen bag of berries had blueberries, raspberries and blackberries, but the actual recipe called for strawberries not black. No matter they are wonderful both ways.
