Don’t be one of those jerks who knocks people for eating green salad as a meal. That’s out. What’s in is adding healthy greens and veggies to your diet any way that you can. With all of the heart disease, diabetes, cholesterol issues, cancer and obesity in America, it’s about time. Go ahead: eat salad with every meal. It won’t kill you. In fact, it may save you.
Now I’m not saying to only eat salads, but try to balance out all the unhealthy things you do eat by feasting on a great salad. Look for fresh ingredients like spinach, baby greens, field greens, tomatoes, carrots and sprouts.
Have something against forking green plants? Have it wrapped in a tortilla. Chinese chicken salad is amazing, with breast meat and greens topped with crispy won ton strips or noodles and tossed in Asian dressing.
Cobb salads are so filling they are hard to finish, served on a bed of spinach with chopped tomato, egg, turkey or chicken, blue cheese and bacon, then topped with dressing. But don’t settle for one of those fake Cobbs, where all the ingredients are arranged on the plate like a palette—true, honest Cobb Salad is chopped, almost to the consistency of potato salad.
A great chopped salad is one of my favorite meals. A salad bar is also a good place to start, and Hawaiian Moons in Kihei has an excellent one. You can choose from so many different ingredients already prepared and cleaned. Alive and Well in Kahului also has a salad trio that you can order at the deli, which gives you a sampler platter that will stuff you, guilt-free. The taco salad at Maui Tacos will satiate your appetite with beans, rice, lettuce, tomato, sour cream and guacamole. And at Stella Blues you can order terrific bowls of fresh greens with your meal, or eat it just as a meal.
