As much as I am saddened by the recent closings in wailuku, i am very excited to see Maui Bake Shop opening. For years colleague Sam Campos and I were woo’d by the French music and amazing French pastries made by Jose and Claire Crall. The windmill was a puff pastry and custard pastry that was amazing with their tres French cappucinos. I can only hope it makes a comeback. Also good, their croque monsieur sandwich. I have not confirmed that Jose or Claire will be back, however my snooping in the windows has revealed they are there. Big changes in their set up, their dining room has a new look, counters are moved around, and there is new seating for customers. Good news for us francophiles.I will keep you posted as I stalk the place.
