Bistro Casanova has opened in central Maui. Lucky enough to be there on there first day open I was pleasantly impressed with the service and food. Carla Tracy and I briefly discussed the long list restaurants that had been in the location, most recently Manana Garage. The place has had a complete facelift, and I am getting a very clean European vibe from the new decor.
I enjoyed a fabulous lunch starting with a salad and fritte for appetizers. The Paia Salad was a vegetarian selection with grilled portobello mushroom on a bed of prepared quinoa with herbs and greens and dressing. It was a perfect mix of bad for you and good for you. My next course was the salmon crepe. The Belgian chef David Gemberling outdid himself with these celebrity named crepes, the smoked salmon was garnished with green onion and sour cream. We also had the grilled chicken sandwich which comes with fries and a side ceasar salad. The chicken breast is grilled and tender with cheese melted over it and smothered with pesto.
