Chef Tylun Pang must be ecstatic now that the renovations of Kō at the Fairmont Kealani are complete. They will officially open their dining room on April 1 and it looks spectacular.
Now we can forget all about their earlier tables that had umbrellas hanging overhead because their space is now far more elegant (which is good, considering the upgrade cost $5 million and took nine months). As of Monday, April 1, they began serving lunch and dinner in the new space. From the food to the architecture to new family-style service options, the entire dining experience has been brought to a new level.
Kō, which translates to “sugarcane” in Hawaiian, showcases the diverse culinary history of the sugarcane plantation era, serving Hawaiian, Chinese, Filipino, Portuguese, Korean and Japanese menu items. The concept was to create a menagerie of dishes that stayed true to each culture rather than in a mixed “fusion” style.
