I was pimping Lei’s so they already knew me here. I got hired on for Season in 2007 and I am still here.
What is your favorite spirit to work with? Most recent drink you made with it?
Square One cucumber vodka and a drink called the Relaxer.
Perhaps you are a wine and beer fan and distilled beverages don’t float your boat, what is the last incredible wine or beer you drank? What made it spectacular?
I love all kinds of wine and beer, only if there’s is nothing else to drink. Had a fabulous port wine at Ferarri Covano Winery.
If you could change one thing about the drinks business on Maui what would it be?
The new wine bottle law …..WTF? Sorry, I mean what were they thinking?

What is your bars signature drink?
Joe-tini, Joe Blow Red, Joe’s drafts
What is YOUR signature drink?
Slightly Dirty cucumber martini shilled up with blue cheese stuffed olives. Yum!
What is the most important thing when making a cocktail?
That it tastes good enough to order another!
What are your greatest influences outside of the drink industry?
Sex Drugs and Rock and Roll
Let’s say you’re pitching an investor who wants you to open your ultimate bar. What is your concept? Where is it located?
Concept: intimate / upscale, great music light pupu menu and awesome cocktails with a place to dance on the southside.
What is the most recent liquor you have tried? What was your impression?
Limoncello, wow! It was tart!
What are your regulars like?
Awesome, we are so blessed with an amazingly diverse array of folks who just have to come to Joe’s. We love you all.
What is the newest drink you have created?
The Hula Girl: Stoli blueberry, Chambord, Pina Colada mix, strawberry puree garnished with coconut and an orchid.
