Here’s my bar: Craft of the Cocktail. If I’m sitting at the bar, it’s going to be Mezcal w/fresh limes and a little sugar for me. If you want to get down with the brown trend, try some of our Templeton Rye, and for the most exotic brown liquor we have the locally distilled Okolehao. If you gravitate towards clear, have our Ocean Vodka, Martini’s Tanqueray gin and tonic or the Herradura tequila with soda
Our craft drinks have a sense of humor, but are perfectly balanced for the palate. A good example is the Morning Wood: Woodford Reserve bourbon, Upcountry honey, Fee Bros Black Walnut bitters with Averna rinse, serve chilled and up and garnished with burnt orange peel.
If it’s happy hour, why not savor a margarita? You know, Paia is a Margarita Town and even though my boy down the street has a death-grip on the voting public–our Margaritas are uber fresh and very creative. We love our local distilleries and carry Haleakala Distillers Maui Platinum Rum, Maui Dark Rum, Okolehao and Oceans vodka. For beers, the Maui Brewing IPA, Bikini Blond & Coconut Porter are all poured here.
Our friend Brianna recently brought in some crazy ass Brazilian Jaboticaba to play around with. Oh man, we love to screw around with lychee, calamansi, Thai basil, cilantro and lilikoi. There’s nothing we shy away from. As for the Jaboticaba, it ended up like this: Ocean Vodka, St Germain, fresh lime, about 12 Jaboticaba, fresh mint and lime bitters. You shake vigorously, double strain and serve up with a lime twist.
If you want to go for a really classy and fun drink, here’s my take on an Old Fashioned: one sugar cube soaked in Angostura bitters, one fresh orange wedge, muddled orange, sugar and bitters. Add ice and two ounces Buffalo Trace bourbon. Give a little stir and a nod the great Elmer T. Lee, then sip.
