Capische?
We are a chef-run restaurant with a bar program that reflects this philosophy through the use of local and hand-crafted ingredients. If I’m sitting at the bar, I would have a delicious glass of sparkling rose’ bubbles in my hand to pair with our house-cured Charcuterie. Or perhaps a handcrafted artisan cocktail served in a copper mug with crushed ice.
The Bonnie and Clyde on our menu features whiskey paired with an interesting digestive over an ice sphere. We love stirring Templeton Rye with Cynar and Luxardo Maraschino liqueur and then streaming it over a delicate but fierce-molded ice sphere. You will love it, too. We also love all the small batch browns from Hudson’s Baby Bourbon Collection.
For our vodka consumers, we muddle fresh sage with local grapefruit juice, shake it with Ruby Red Vodka and finish with an effervescent splash of soda water. We call her the Anna Sage. We also love our small batch gin selection–our favorite gin cocktail is the Ticking Thyme: Uncle Val’s Gin with Chartreuse Verte, muddled thyme from the garden and lemon juice served chilled and up.
At Capische? we feature a daily variety of local fruit in our traditional Brazilian Caipirinha spin called the Caipifruta. We have a starfruit tree on the property of Capische? that’s presently producing an abundance of starfruit. In a mason jar, we muddle half of a lime, local star fruit sugar, Cachaca and lots of crushed ice. It’s the perfect, refreshing cocktail to savor and sip while viewing sunset from our bar.
I have to share our creation–the Sinner & Saint is the perfect balance of naughty and nice. It’s a Cynar-drenched sugar cube dropped in a champagne flute with a touch of elderflower essence of Saint Germain topped off with chilled Prosecco!
If a customer needs a little direction, I point them to our “Potable Potents” specialty cocktail menu. We designed this collection based on classic, prohibition-style cocktails, but with a Capische? twist. The flavor profiles are unique and simple, with a bit for all palates.
We have an amazing happy hour daily from 5-7pm offered in the Bar & Lounge. We offer our Specialty Cocktails for $10, a Small Plates Menu for $10, as well as selected beer for $5 and selected house wines for $8. All are accompanied with ever-changing sunset views strewn across the sky. Our local beer selection has recently expanded including selections from Maui Brewing Co., Big Island Brewhaus (large format beers) and Kona Brewing Co.
