Last week i survived on prepared salads from the health food store. This week i am planning to make them myself.
I am making a raw tomato, cucumber, with scallion and cilantro salad. This can top pasta, rice, or beans.
I baked a kabocha whole, and then seeded and skinned it. This will be topped with ponzu and parsley.
Last I roasted beets and yams with lemon and italian seasoning. This can accompany what ever other salads I may be eating to add a sweet flavor, or reheated and eaten warm.
I have been chopping for hours in the kitchen, but this will save time this week.
