Molokai Shrimp is the best, and whenever I visit Kaunakakai I pick up a bag from John Austin, proprietor of Keawa Nui Farm. My mom hates cleaning them, so I do the work of de-shelling, but it is so worth the feast we have after. I take the shells and make a shrimp broth, it is fantastic.
The shrimp are popular among chefs, you can get them on David Paul’s menu in Lahaina, and Roy’s serves them too.
They are antibiotic free. Hawaii has an Aquaculture Disease Prevention program, the only one in the U.S. This program tests for viruses that are common in farmed shrimp. Austin’s shrimp are always sold fresh.
