What item do you love to prepare from your menu?
Shrimp scorpio. This dish is sweet savory and delicious. You also get to see a nice flame when you add the Sambuca to the pan.
What dish is the “must order” thing on the menu?
The catch is a must order when you eat at Joe’s. The flavors in this dish really complement each other. We prepare it with fresh locally caught mahi. Then it is crusted with pumpkin seeds and sauced with a lemon beurre blanc and chipotle honey drizzle.
What dish uses products / produce / proteins from Maui?
All of our menu items use local ingredients. All though the grilled ahi dish has a southwestern twist to it. We use locally grown jicama, cilantro, jalapeno, mint, Kula corn, Butternut squash, and of course the Ahi is locally caught.
What ingredient is a must have for you and why?
I must have our house made garlic herb butter. It is made with our home grown basil. We sauté our veggies with garlic herb butter and the flavor is amazing.

Taste is everything and the fresher your produce, products and proteins are the better.

Shrimp scampi.
6 Jumbo shrimp
½ tbsp. garlic
¼ onion, medium dice
½ cup white wine
2 tbsp. butter
1 tbsp. fresh lemon juice.
1 tsp. parsley, chopped
Salt and pepper (to taste)
Explain the recipe, Why are you sharing this? When do you make this? Does it use Maui ingredients?
Saute 6 Shrimp, onions, garlic, deglaze with white wine. Add parsley, butter fresh lemon juice, season with salt and pepper. I chose this recipe to share because it is a simple dish with great flavors. I make this every chance I get. It uses maui onion, home grown parsley and local lemons. Winner everytime.
