Summer Roll’s are a perfect high heat noon summer food. Not sure if that is where they get their name.
You can get them many places, but the one pictured here is from Down to Earth’s Deli for $2.50. If you want a side of peanut sauce its addl 49 cents. (it does have sauce inside the wrap)
Filling, but light, the rice wrap on Down To Earth’s version is not your usual Banh Trang wrapper, its thicker and has a more gelatinous texture, and savory flavor.
The wrap is absolutely stuffed to the gills but doesnt burst easily, Down to Earth puts shredded carrots, cucumber spears, beach sprouts, mint, rice noodles tofu and peanut sauce inside.
I stopped at the Dairy Road store, that has plenty of parking.
