Booze is a tricky thing. We’re living in a kind of Liquor Renaissance, but on Maui we have to tiptoe around the draconian rules of our county Department of Liquor Control.
The mixology revival may merely be a backlash against the pre-bottled convenience mixes of the 1970s and ‘80s, or perhaps it ties sustainable farm-to-table practices to bar chefs. Either way, we can now enjoy more locally grown fresh fruit and locally distilled liquors in our glasses than ever before. Of course, that also means it’s not unusual to see $15 price tags in bar menus as mixologists turn farm-to-glass creations into award-winning masterpieces.
The advent of local booze has also seen the construction of several local distilleries on the island: rum, wine, sparkling wine, beer and vodka, so far. More are coming, but many of our local watering holes already carry these local brands.
Through it all, our bartenders have steered this rejuvenation, so it’s only natural to let them be your guides in making selections. The industry says there is a renewed interest in everything that isn’t vodka, with people ordering more whiskey, tequila, rum and gin. Logically, the back bar selections are following suit.
For our annual Bar Issue, we polled a selection of local bartenders for their cocktail advice, which they dish on the following pages. We’ve also toiled to bring you Maui’s Best Happy Hour Guide, but please take care with the information.

Hali‘imaile General Store is a charming, old-style plantation store in the middle of an Upcountry pineapple field that serves all fresh culinary cocktails with an award winning wine list and local beers. If I’m sitting at my bar, I’d be ordering the Tai Mai, our award winning Mai Tai and Hawaii’s state drink! It has all fresh ingredients, a balance of sweet and tart, local rums, almond, Kaffir, fresh limes and orange juice. If you like brown liquor, a fresh Tamarind Whiskey Sour could quite possibly beat the Tai Mai in freshness and flavor. All fresh culinary cocktails served here use seasonal fresh local fruits and herbs. Some recent favorites include fresh juiced lilikoi, mangos, Kula strawberries, Pommelo, tamarind, ginger, coconut, lemongrass and Kaffir. You name it, we can do anything!
If you are not sure what to order, I’m positive I can find your pleasure. Is it sweet? Sour? On the rocks or blended? Try this for local flavor: lilikoi is in abundance now so drinking it in a martini is exquisite. Use Pau Vodka with fresh lilikoi and serve with a citrus zest sugared rim. It’s sweet, tart and smooth.”

Capische?
We are a chef-run restaurant with a bar program that reflects this philosophy through the use of local and hand-crafted ingredients. If I’m sitting at the bar, I would have a delicious glass of sparkling rose’ bubbles in my hand to pair with our house-cured Charcuterie. Or perhaps a handcrafted artisan cocktail served in a copper mug with crushed ice.
The Bonnie and Clyde on our menu features whiskey paired with an interesting digestive over an ice sphere. We love stirring Templeton Rye with Cynar and Luxardo Maraschino liqueur and then streaming it over a delicate but fierce-molded ice sphere. You will love it, too. We also love all the small batch browns from Hudson’s Baby Bourbon Collection.
For our vodka consumers, we muddle fresh sage with local grapefruit juice, shake it with Ruby Red Vodka and finish with an effervescent splash of soda water. We call her the Anna Sage. We also love our small batch gin selection–our favorite gin cocktail is the Ticking Thyme: Uncle Val’s Gin with Chartreuse Verte, muddled thyme from the garden and lemon juice served chilled and up.
At Capische? we feature a daily variety of local fruit in our traditional Brazilian Caipirinha spin called the Caipifruta. We have a starfruit tree on the property of Capische? that’s presently producing an abundance of starfruit. In a mason jar, we muddle half of a lime, local starfruit sugar, Cachaca and lots of crushed ice. It’s the perfect, refreshing cocktail to savor and sip while viewing sunset from our bar.
I have to share our creation–the Sinner & Saint is the perfect balance of naughty and nice. It’s a Cynar-drenched sugar cube dropped in a champagne flute with a touch of elderflower essence of Saint Germain topped off with chilled Prosecco!
If a customer needs a little direction, I point them to our “Potable Potents” specialty cocktail menu. We designed this collection based on classic, prohibition-style cocktails, but with a Capische? twist. The flavor profiles are unique and simple, with a bit for all palates.
We have an amazing happy hour daily from 5-7pm offered in the Bar & Lounge. We offer our Specialty Cocktails for $10, a Small Plates Menu for $10, as well as selected beer for $5 and selected house wines for $8. All are accompanied with ever-changing sunset views strewn across the sky. Our local beer selection has recently expanded including selections from Maui Brewing Co., Big Island Brewhaus (large format beers) and Kona Brewing Co.

Charley’s Restaurant and Saloon
Charley’s Bar is iconic. It’s a casual, comfortable, historical saloon in Paia Town. My two favorite cocktails are the Haiku Hippie, made with fresh cucumbers and Hendricks gin, and our chocolate martini is to die for!
We carry a number of great whiskeys including Knob Creek and Bookers–we are a saloon, after all. But for those who like clear drinks, since we always have fresh mint, we serve a lot of Mojitos. For people who like sweet cocktails, I offer the Paia Punch or the Maui Martini. Otherwise, we make a killer Spicy Menehune Margarita with fresh jalapenos.
We now have three beers on draft from the Maui Brewing Co. as well as two in the can. We also carry Ocean Vodka (bottled on Maui) and Old Lahaina Silver and Dark rums, distilled right here in Paia. For more local punch, try the Maui Ocean Blues with blueberries, fresh lemon juice and a hint of basil. It’s real tasty. But I can’t tell you my drink recipe–like a magician, we don’t often reveal our tricks.

Here’s my bar: Craft of the Cocktail. If I’m sitting at the bar, it’s going to be Mezcal w/fresh limes and a little sugar for me. If you want to get down with the brown trend, try some of our Templeton Rye, and for the most exotic brown liquor we have the locally distilled Okolehao. If you gravitate towards clear, have our Ocean Vodka, Martini’s Tanqueray gin and tonic or the Herradura tequila with soda
Our craft drinks have a sense of humor, but are perfectly balanced for the palate. A good example is the Morning Wood: Woodford Reserve bourbon, Upcountry honey, Fee Bros Black Walnut bitters with Averna rinse, serve chilled and up and garnished with burnt orange peel.
If it’s happy hour, why not savor a margarita? You know, Paia is a Margarita Town and even though my boy down the street has a death-grip on the voting public–our Margaritas are uber fresh and very creative. We love our local distilleries and carry Haleakala Distillers Maui Platinum Rum, Maui Dark Rum, Okolehao and Ocean Vodka. For beers, the Maui Brewing IPA, Bikini Blond & Coconut Porter are all poured here.
Our friend Brianna recently brought in some crazy ass Brazilian Jaboticaba to play around with. Oh man, we love to screw around with lychee, calamansi, Thai basil, cilantro and lilikoi. There’s nothing we shy away from. As for the Jaboticaba, it ended up like this: Ocean Vodka, St Germain, fresh lime, about 12 Jaboticaba, fresh mint and lime bitters. You shake vigorously, double strain and serve up with a lime twist.
If you want to go for a really classy and fun drink, here’s my take on an Old Fashioned: one sugar cube soaked in Angostura bitters, one fresh orange wedge, muddled orange, sugar and bitters. Add ice and two ounces Buffalo Trace bourbon. Give a little stir and a nod the great Elmer T. Lee, then sip.

Ambrosia Martini Lounge
Ambrosia is an energetic, intimate, club-feel alternative to Maui’s nightlife with something for everyone. If I’m sitting at the bar, I’m ordering a shot of Fernet Branca and a glass of red wine alongside a cheese platter: provolone, brie and aged white cheddar. As for our most popular brown spirits, Jagermeister and Jameson are still weekend favorites, but we’re seeing an increase of interest in Fernet Branca (a few of the bartenders’ drink of choice). It’s similar to Jager, but a little more minty and a lot less sweet.
Our vodka and tonics are a treat at Ambrosia; the quinine in the tonic water plus our black lights throughout the bar make your drink glow! Also, guests of Ambrosia love our Gusher, created by Candice Seti: it’s a refreshing mix of Strawberri Stoli, St. Germaine, fresh squeezed lemon and club soda.
If you’re not sure what to order, our Lilikoi Martini is always a winner. It’s a tangy twist of the traditional lemon drop with a sweet profile. If you’re looking for something a little less sweet, our Tequila Twilight martini is a great choice–tequila, grapefruit and lime juice and just a bit of sugar. Feeling naughty? Try our S&M Martini featuring Mazama Pepper Vodka and blue cheese-stuffed olives.
My drink recipe is the Gummy Bear–try it at Ambrosia or make one at home: Stoli Raz, triple sec, sweet & sour and a splash of Sprite. It tastes just like a white gummy bear!

Pulehu, An Italian Grill
At Pulehu, we have intimate and attentive bar service with a wine-savvy veteran at the helm. If I’m at a bar, I’m having a glass of wine–probably a Riesling, Grenache or Pinot. I’m seeing more brown liquors in vogue, but also white versions of browns (unaged whiskies, for example) are coming into view. Our best selling browns are single malt scotches, Macallan 18 and 12.
If you’re unsure what to order, start with one of our signature cocktails such as our Pulehu Cooler with Ciroc coconut, fresh lime, melon liqueur and strawberry puree or the Capri Fizz with Prosecco, Lemoncello and gin. We don’t have a Happy Hour, but we do a prix fixe menu 5:30-6pm and a weekly wine social from 5pm on Mondays.

Ko
The Ko bar is literally the center of attention. Our creative cocktails follow the concept of the cuisine, featuring local ingredients and flavors. The energy is lively with our entertainment seven nights a week, and we love seeing our hotel guests and local regulars nightly.
I’m a purist, but if I had to choose a cocktail on the menu, the Home Grown would be my beverage of choice. It’s a refreshing cocktail with local strawberry pepper jam from the Lavender Farm in Kula. If not this, I would drink one of our 26 wines by the glass.
We love serving Woodford Reserve Bourbon. The Papaya Smash features this spirit along with mint leaves, fresh lemon juice and papaya puree; it’s an interesting twist with local flavors and a wonderful brown spirit.
Although it’s technically not a clear spirit, we have a clear cocktail featuring Ty Ku silver sake, called the Sakejito. This clear beverage is served martini style and is super refreshing. Be careful with this one because it’s not strong–you may want to have more than just one.
The easiest cocktail for us to sell is our seasonal mojito. Every few months we will have a new and exciting mojito with fresh ingredients. We have featured cucumber and pomegranate, pineapple and vanilla, or strawberry and basil.
Our Happy Hour consists of mixed cocktails for a great value. We do not discount our wells, but rather feature well-crafted cocktails for an affordable price.
Sammy’s Beach Bar Rum, made here on Maui, is the featured spirit in two of our signature cocktails: Pineapple Da “Ko” Ri and also the Ko Plantation. We also have local spirits for call including Ocean Vodka, Pau Vodka, Maui Cello and Kahana Royale Macadamia Nut Liqueur. All of our draft beers are local, featuring three Maui Brewing Company beers in addition to Longboard Lager from Kona Brewing Co.
We try to follow our chef’s passion for local ingredients and sustaining local businesses and farms on the island. The bar is an extension of our kitchen and we will always try to feature as many local fruits and garnishes when they are available to us.

At Monkeypod Kitchen’s bar we feature handcrafted cocktails, craft beer and boutique wine, all served with aloha. It’s that simple. I’m having champagne if I’m sitting at the bar. It’s a tough call because I’m really into bourbon right now. I just went to Kentucky and did a lot of “tasting.” We sell more of our whiskey-based cocktails than we do well vodka. I’m glad to see people drinking more flavorful liquors.
For years, I’ve been trying to get people to appreciate gin. We have a great selection and people are starting to substitute gin for vodka, which makes me so proud. Our No Ka Oi cocktail is served with vodka, lilikoi, Thai basil, egg whites, lime and simple syrup and is actually fantastic with gin.
When folks aren’t sure what they want, I ask them for a category, then take it from there. I will usually try to get someone to try a gin or whiskey-based cocktail. I want to encourage people to be adventurous.
If you’re here at Happy Hour, the food is 50 percent off. The Pumpkin Patch Ravioli and Mushroom Pizza are a few of my favorites and all of our cocktails are delicious. We love supporting local beverages–we feature Maui Brewing Company, Ocean Vodka, Old Lahaina Rum, Sammy’s Beach Bar Rum, Maui Dark Rum and several other brands from other islands.
Honey is one of my favorite ingredients to work with right now. I really like using it as an alternative to simple syrup. We use it in our Pistol Pete’s Sazerac with Templeton Rye Whiskey, Peychaud’s bitters and a touch of absinthe. It’s delicious!

Hula Grill
Hula Grill is an oceanfront exciting upbeat, hula swinging, Mai Tai flowing great place to meet a new friend. If I’m at the bar, I’m having a glass of vino–Paul Hobbs Crossbarn Chardonnay or some Peju Tess if I’m with the girls.
Clear liquor to many translates to “skinny” which a lot of our guests are seeking. We try to keep recipes as “skinny” as possible by using only fresh juices and house-making all of our mixes and specialty syrups.
If you haven’t had our Mai Tais, they are a must. But if you’re Mai Tai’d out for the day, then try a world famous Woo Woo, created and named after the man himself, Hula bartender Mike Woo.
Most of the beers we pour are local. Maui Brewing Co. has created an amazing beer brewed exclusively for Hula Grill that’s our top seller. It’s called the Barefoot Brew, and is a honey golden ale using local honey. We also have Maui Brew Co.’s Bikini Blonde, Big Swell IPA, Mana Wheat and Coconut Porter, as well as Kona Brew Co.’s Longboard Lager, Firerock Pale Ale and Wailua Wheat. Primo is also available. We also feature two local liquors on our drink list using Ocean Vodka and Koloa, Kauai’s local rum.
I’m pretty pumped on the fresh squeezed juices we use for everything. We house-make our sweet and sour mix for margies, pina colada mix with fresh juices, fresh POG for Mai Tais and house-made ginger syrup for Hana Hou’s and fresh ginger ale. With great product, it’s pretty tough not to get a great cocktail or mocktail.
My cocktail creation to share is the Hana Hou–it’s a take on an Arnold Palmer, but not the kind your dad drinks. Made with Ocean Vodka, fresh squeezed lemonade, iced tea, it’s then shaken with house-made ginger syrup and lilikoi and served on the rocks.

When I’m at the bar, I’m enjoying a local beer like Duke’s Blonde Ale. Most of our guests want the full Maui experience at Duke’s, which often includes a tropical drink or local beer to go with the spectacular view. Myers Dark Rum and Zaya Rum are the most popular browns here. For clear distillates, it’s Mojitos and Duke’s Lemonades.
For those new to the bar or on the fence as to what to order, I like to recommend the Hawaiian Punch. It tastes just like the Fruit Juicy Red that you drank as a kid, except it’s an adults only version. We offer some great local liquors such as the Koloa Rums and Ocean Vodka. Koho’s is a local favorite. If I’m sitting at a bar, I’m having a Longboard draft and a shot of Patron Silver. As for our most popular brown liquor, it has to be Crown, with Crown on the Rocks. But I still make a lot of Dirty Martinis, Cosmos and Lemon Drops for the clear crowd. If you aren’t sure what to order you have to try the Koho Punch or the newest Kinky drinks. Kinky is a new vodka infused liqueur.
If you’re here at Happy Hour, enjoy ice cold Bud Light draft, Longboard draft, Stella Artois and sports on TV. For a locally distilled beverage, we have Pau Maui Vodka made in Hali‘imaile. Mala Ocean Tavern
Mala’s bar is a lively place to relax if you want to smile. If I have a chance to sit at the bar I order either our handmade Mojito or a glass of wine from our diverse wine list to do the trick.
While the trend of brown liquors seems to be exploding on the Mainland, I feel as though when people come to Hawaii they want a taste of the islands–especially while staring at the ocean from our bar. Makers Mark is still our best-selling brown, with our most exotic being the “Ricard”–a French Aperitif with delicate flavors of anise and fresh herbs. We also have an amazing version of a Pimm’s Cup that shouldn’t be missed. And we have a variety of Martinis, from the classics to tropical, that are still our most popular cocktails.
Maui has so much to offer when it comes to produce and it keeps getting better. I love local watermelon, mango, Upcountry herbs, Kaffir lime leaf, coconut water and anything else that’s fresh and in season. We’re always experimenting and trying to come up with new, exciting beverages. Take, for example, Mala’s Classic Margarita: fresh lime and equal parts of Cointreau and your tequila of choice.

If I’m sitting here, I’m having a beer and Jager. We have been the highest selling Jager bar for three years, but Fireball and vodka are popular, too. If you’re local and visiting for the first time, I will give you the specials and if you’re visiting I can make a mean tropical drink.
At Diamonds we have all Kona beers, Maui rum (light and dark) and Pau Vodka. The Maui rum is made with real molasses, and you can definitely taste that. But if it’s simple and delicious you’re after, try the Absolut peach and lemonade.
