Chef Sheldon Simeon has a lot of undertstated elegance in his menu, but he’s dedicated to the ingredients and making them the real star of the show. I’ve seen him at work on the kim chee that’s made primarily to end up as a paste that graces the sizzling ribeye and the Brussels sprouts. It looks like a lot of trouble; it takes days to make this one ingredient that goes in the dish, but it pays off in flavor. That’s is the kind of attention to detail that makes Chef Sheldon the master, and Best of Maui’s Best Chef.
