This little Wailea resort cafe offers a hell of a veggie sandwich. Between two slices of olive kalamata bread are layers of roasted eggplant, yellow squash, zucchini, lettuce, tomato, red onion and olive relish. ALIVE & WELL
Alive & Well is home of one of the simplest veggie sandwiches out there, and one of my favorites. They start with two slices of bread, then pile on lettuce, tomatoes, carrots, sprouts, mustard, veganaise and probably some other stuff I’m forgetting. 340 Hana Hwy., Kahului, 877-4950. MARCO’S GRILL & DELI
Marco’s is a nice little place in Kahului that sells a lot of pizza and pasta. I was actually surprised that they also offered a grilled veggie sandwich, but hey, it’s a free country. There’s has lots of vegetables and melted Swiss cheese, which though not a vegetable, does add considerably to the sandwich. 444 Hana Hwy., Kahului, 877-4446. Open daily 7:30 a.m.-10 p.m. $
MANA FOODS
The deli counter at Mana sells some seriously good sandwiches, veggie and meat-filled. Like Alive & Well, they’re pretty straightforward. But when you want to pack a picnic lunch for Hamoa Beach in Hana, there are no better options. 49 Baldwin Ave., Paia, 579-8755. Open daily, 8:30 a.m.-8:30 p.m. $
MAIN STREET BISTRO
One of Wailuku’s more sophisticated little eateries, Main Street Bistro offers a tasty gilled vegetable sandwich.
