That’s right, kids: if you don’t like what’s on the menu, little Taqueria Cruz in Kihei will now let you Build Your Own Burrito. Now to be fair, this is more of a “Design Your Own Burrito” plan than an actual construction assignment. Rather than give you a spoon or trowel or whatever it is that cooks use to prepare food these days and then turn you loose at the stove, Taqueria Cruz will give you a surprisingly detailed checklist to fill out to get exactly the right staple of Mexican food that you want.
You can choose between wheat or flour tortillas (or opt to exchange the tortilla itself for a bowl), two types of beans (black or whole pinto) and nine types of meat (including chile verde, baja fish and blackened garlic shrimp). Vegetarians can choose between fajita or poblano veggies. For cheese, they have queso fresco and a cheddar/Jack blend (or you dairy-free people can just ignore that part of the checklist). Other optional freebies include onion, lettuce, tomatoes, cilantro and sliced jalapenos. For a few cents more, you can also add sour cream, chipotle aioli, jalapeno aioli, fresh guac or additional fajita veggies.
Then a few minutes later, you’ll get a soda can-sized Mission-style burrito, all snugly wrapped in aluminum foil. Or you can pay a few dollars more and get it wet with red ranchero sauce, green chile verde sauce or a mix of both.
