The mission of Lokahi Pacific is to improve our quality of life here in Maui County, both socially and economically. So when they built the commericial Lokahi Kitchen the idea is for Maui food entrepreneurs to have a crack at producing and manufacturing their products for sale on the retail market. Hawaii Department of Health requires you to do a couple of things if you want to package up foods for sale, one of them is create da bugga in a commercial kitchen. Sorry no home kitchens allowed.
Lokahi’s kitchen is located in the Harry & Jeanette Weinberg Pono Center on Market Street. There is a lot of hustle and bustle next door, Cafe O Lei Wailuku’s busy kitchen is adjacent, and shares the dishwashing space with the Lokahi kitchen.
Lokahi has this to say about their kitchen, “This is the home of Maui’s first shared-use, licensed commercial kitchen. This fully-equipped two-station kitchen will be operated by Lokahi Pacific as part of its small business incubation program; it is used by the café, and will also be available for use by the community of Maui. The Kitchen is a licensed commercial kitchen available to any community member or organization interested in starting up or working in a specialty food business.”
They envision gourmet food producers, start up caterers, bakers, cooking teachers, street vendors, private chefs, fundraisers, community groups, occasional users and private citizens defining the use of this kitchen. All you need is TB clearance, Department of Health, Sanitation & Food Safety Certification, and supply fee of $5. The space is rented at $20 an hour with a 3 hour minimum.
