Four Seasons Resort Lanai has named Kemar Durfield its Chef de Cuisine. Durfield will oversee all hotel culinary operations including ONE FORTY, American Steak Hawaiian Seafood, in-room dining and extensive catering offerings for weddings, social occasions and other events at the resort, which is scheduled to reopen on Feb. 1 following a lobby-to-roof, multi-million dollar transformation.
Durfield, who brings a wealth of operational knowledge and creativity to the kitchens, has worked with many celebrity chefs including James Boyce, William Bradley and Michael Mina. He comes to Four Seasons Resort Lanai with more than 20 years of experience in the hospitality and restaurant industries, including Chef de Cuisine at the Halekulani as well as The Grand Del Mar’s Addison restaurant.
“We are excited to welcome Kemar to the Lanai ‘ohana,” said Tom Roelens, General Manager, Four Seasons Resorts Lanai. “His passion for locally sourced ingredients along with his extensive experience in leading the helm of numerous fine dining restaurants will ensure our guests enjoy delicious and memorable culinary experiences here on Lanai.”
Durfield is a graduate of the Scottsdale Culinary Institute and was inducted into the prestigious Relais & Chateaux in 2011.
In addition, the resort also hired Gloria Ah Sam to run its daily spa operations, fitness facilities and yoga and wellness programs. The previous spa director at the Ojai Valley Inn & Spa in California, she also has experience working at the Halekulani resort and the Royal Hawaiian Hotel’s Abhasa Spa.
