I decided to try this multigrain pancake mix that I bought at costco. I have tried a couple of brands of multigrain pancake mixes, but have not this one from Coach’s Oats yet. The non multigrain at Costco is the Krusteaz.
One of the things that attracted me to this purchase was that it boasted that it was high in dietary fiber and contained 8 whole grains. The ingredients list is not that long, and I can pronounce all of the items in it.
Making the batter is a little different than the usual add water. This one calls for 1 egg as a binder. Also there is only one recipe for batter and it makes a lot. Twelve five inch pancakes. I am usually cooking for just one small person who loves pancakes, so its way too much.
The recipe takes 1 egg, 1 1/2 to 2 cups COLD water, and 2 1/2 cups pancake mix. Then you let it sit for 2 to 3 minutes to thicken up.
The directions say the griddle should be on medium to high heat, however I have found that medium to low works best with this batter. (I work on a cast iron skillet heated on an electric stove, and the iron conducts the heat quite well.)
The batter is more to the thin side, it sticks fairly easily and browns quickly. It works fine when you add fruit to the batter, these pictured here have berries in them.
Cooking smaller size pancakes is better with this mix, the larger ones tend to not flip well. The batter does not dry up right away and larger cakes break off on the edges or the wet batter slips off as you flip them.
It may start to sound troublesome at this point, but the flavor and texture make it worthwhile. The pancakes land in the sweet side, still attractive to children’s palates, and the wholegrain part pleases me. The worst critics in my household are under 5 feet and under age. Namely my 5 year old, and these pancakes pass muster with her and her 8 year old cousin and 3 year old cousin.
