We have quite a few..there’s something from starters to desserts that have locally grown or raised products.
What ingredient is a must have for you and why?
Sweet Maui Onion because it can be sautéed for a savory characteristic or left raw for its sweetness.
One tip from your kitchen: (Any how to, timesaver, sanitation, or preparation tip).
When preparing a flambé, such as The Strawberries Panzini, spinning the glass while the cognac is on fire will distribute the heat evenly throughout the glass and prevent it from breaking.
One recipe: (Like I said it can be simple, or complicated, sweet or savory, from the restaurant or something you like to make at home)
Greek Maui Wowie Salad
Ingredients for Dressing:
16 oz Capers with liquid
2 c Olive Oil
½ c Red Wine Vinegar
6 ea Cooked Egg Whites, finely chopped
1 Tbsp Dijon Mustard
2 Tbsp Parsley, finely chopped
¼ c Roasted Red Peppers, minced
To Taste Salt & Pepper
Combine all ingredients and refrigerate for 24 hours
Preparing the Salad
20 ea Roma Tomatoes, diced
4 ea Maui Onions, diced
6 ea Avocados, diced
1 c Feta Cheese
1 c Bay Shrimp
1 c Hearts of Romaine, shredded
Combine all ingredients and toss with dressing. Serve immediately.
