When Sheraton Maui Resort & Spa decided to change their restaurant options, they went to their guests and asked them what they would like to see served. The consensus was steak and seafood, and in October of 2007 they opened the Black Rock Steak and Seafood Restaurant. Executive Chef Brian Ashlock created the menu that takes elements of American Steakhouse cuisine and pairs it with Pacific Rim cuisine, and comes up with a very genuinely infused interpretation of the two.
The best news is that the Sheraton Maui Resort & Spa is offering 50% off for kama’aina for all food items on the menu at Black Rock Steak and Seafood through the end of March. Its such great deal, items like their signature bone in rib eye are a mere $23 for Kama’aina and lobster tail just $18. Self parking makes it easy to drop in, and you can get validated so its only $1. The dining room is open air and elegant, there are tables on the lanai, and you can hear the waves crashing against Kaanapali Beach.
With over 75 bottles of wine on their list and about 12 available by the glass each section of the menu offers suggested wine pairings. Their starter Black Rock Pizza features maui’s own Surfing Goat Dairy Goat cheese along with locally grown veggies and calamata olives and mac nut pesto. The crab wontons feature a smooth savory crab mousse interior, crisp wonton crust and a spicy chili jus for dipping. I had to try their traditional onion soup, something I order everywhere I go. The ceramic dish arrives piping hot, with a lid of melted cheese topping the entire dish, and an underbelly of beef broth soaked bread and caramelized onion. The sweet onion and salty broth, crusty cheese and soggy bread was delicious. Since you are in for a meaty treat, I recommend starting with one of their phenomenal salads, upcountry greens, classic ceasar, or cobb salad.
The signature dish is the Ribeye served with your choice of sauces and flavor choices. The Kona coffee rub and herb butter combo with Cabernet and caramelized onions is just one way to go. Executive Sous Chef Conrad Aquino says, “the steaks are simply seasoned with Hawaiian and Kosher salts and ground whole black pepper. Then we sear the ribeye on the hottest area of the grill to seal in juices and flavor the beef. Then it is moved to a cooler area to bring the steak to its optimum temperature. This is our ‘four corner grilling method.’ Finally the ribeye gets a moment to rest to reabsorb juices and flavor. It is excellent”
Also one of their masterful dishes, the Seafood Cioppino took center stage, with spiny lobster, tiger shrimp, scallops, magi, and crab served on your choice of linguini or Macadamia Nut Pilaf. I adored this dish, the seafood was amazing. I liked the crab claws were shelled, but the claw was intact, no muss no fuss in this dish. Aquino says, “The ingredients are simmered in a nice fennel saffron and lobster broth with a hint of Pernod which gives it a nice anise flavor.” I never thought I would like the licorishy hint on my seafood, but it does well here, neither overpowering or underwhelming.
Their spiny lobster is from New Zealand, chosen for having some of the coldest temperatures in the ocean that produces the best quality lobster. The Black Rock Steak and Seafood filet with petit lobster tail dish is simple and excellent. Aquino says, ” Less is more. By keeping “simple” we can focus on a three to four component dish. A perfect whipped garlic mashed potato, a perfect grilled asparagus, a beautiful piece of steak or grilled fish cooked and and our beautiful caramelized Maui onion deem glace that is out of this world. Each component must stand out on its own and taste perfect.” The staff is extremely knowledgeable on their menu, and they are incredible
If you are dining with children their kids menu items are standard, and portions are huge, my daughters chicken fingers and wedge potatoes were enough for dinner and lunch the following day. The finale of desserts are gorgeous and just what you would expect from a resort: Pacific Rim Trio is chocolate dipped phyllo sticks and lilikoi mousse and kona coffee creme brulee, molten lava chocolate cakes, mile high mud pie, all to die for.
