Shave ice is an art which can go terribly wrong. The ice can be chunky, you can have so much syrup that it’s sickeningly sweet, or worse, not enough syrup, leaving you with a tasteless blah of ice. But when done right, the ice is lighter than angel kisses and the syrup to ice ratio is so perfect it could make unicorns cry.
